Ingredients:
• 450 gm rice, washed and soaked for 40 mins.
• 3 tbsp oil
• 1 large onion, sliced
• 2 tsp – Cumin seeds
• 3 Cardamom pods
• 1-inch Cinnamon sticks
• 8 Cloves
• 8 Black Peppercorns
• 4 tsp – garlic, crushed
• 4 tsp – grated Ginger
• 4 green chillies, whole or chopped
• 4 medium fish steaks, cut into chunks
• 115 gm – Prawns
• 150 gm – peeled, chopped Tomatoes
• 6 small potatoes, peeled and cut into quarters
• 250 ml – water
• a handful of chopped Coriander leaves
• Salt to taste
• 25 gm – Butter or margarine
Method:
- Wash and soak the rice.
- Heat oil, add the onion, cumin seeds, cardamom pods, cinnamon, cloves and peppercorns.
- When the onion has softened, add the garlic, ginger and chillies and fry for 2 mins.
- Then add the fish, prawns, tomatoes, rice, potatoes and water, along with the chopped coriander leaves and salt to taste.
- Bring to boil; cover and simmer over low heat for 40 mins. until the rice has cooked.
- Add the butter or margarine in blobs, while hot.
