
Ingredients:
• Onion – 1, large chopped
• Butter – 3 tbsp
• Bay Leaf – 1
• Potato – 1 medium, cut into cubes
• Garlic – 1 clove, chopped
• Tomatoes – 4 large, chopped
• Pepper powder – 1/4 tsp
• Sugar – 1 tsp
• Water – 4 cups
• Cream – 1/2 cup
• Salt to taste
Method:
- Melt butter in a sauce pan. Add bay leaf, onion and potato.
- Stir and fry without browning for about 3 mins.
- Add the remaining ingredients except cream.
- Close the sauce pan and cook nicely.
- Remove from heat and cool it.
- Open the sauce pan and discard bay leaf.
- Mix the soup smooth in a blender or mash it through a sieve.
- Return soup to sauce pan and reheat.
- Serve hot and garnish each individual serving with a tbsp of cream.
