Ingredients:

• Onion – 1, large chopped
• Butter – 3 tbsp
• Bay Leaf – 1
• Potato – 1 medium, cut into cubes
• Garlic – 1 clove, chopped
• Tomatoes – 4 large, chopped
• Pepper powder – 1/4 tsp
• Sugar – 1 tsp
• Water – 4 cups
• Cream – 1/2 cup
• Salt to taste

Method:

  1. Melt butter in a sauce pan. Add bay leaf, onion and potato.
  2. Stir and fry without browning for about 3 mins.
  3. Add the remaining ingredients except cream.
  4. Close the sauce pan and cook nicely.
  5. Remove from heat and cool it.
  6. Open the sauce pan and discard bay leaf.
  7. Mix the soup smooth in a blender or mash it through a sieve.
  8. Return soup to sauce pan and reheat.
  9. Serve hot and garnish each individual serving with a tbsp of cream.
