Ingredients:

• 2 cups – whole meal self-rising flour
• 1 cup – ripe Banana
• 1/2 cup – Brown sugar
• 100 g – Ginger
• 100 g – Walnuts
• 50 g – poly saturated margarine
• 1 – Egg

Method:

  1. Mash banana well. Finely chop ginger.
  2. Cream margarine and sugar until smooth.
  3. Add lightly beaten egg and mashed bananas and mix well.
  4. Now add sifted flour returning husks to the mixture, walnuts and ginger.
  5. Combine and pour out into a greased cake tin and bake at 180 degree C for 1 hour or until golden brown.
