
Ingredients:
• 2 cups – whole meal self-rising flour
• 1 cup – ripe Banana
• 1/2 cup – Brown sugar
• 100 g – Ginger
• 100 g – Walnuts
• 50 g – poly saturated margarine
• 1 – Egg
Method:
- Mash banana well. Finely chop ginger.
- Cream margarine and sugar until smooth.
- Add lightly beaten egg and mashed bananas and mix well.
- Now add sifted flour returning husks to the mixture, walnuts and ginger.
- Combine and pour out into a greased cake tin and bake at 180 degree C for 1 hour or until golden brown.
