Ingredients:
• 12 oz – glass noodle (Dang myun)
• 4 oz – Beef
• 5 – shitake Mushrooms
• 1 – Carrot
• 1 – Onion
• 1 – Egg
• 1 bunch – Spinach
• 5 tbsp – oil
• Salt
• 1 tsp – Sesame seed oil
• 1 tsp – sesame seeds
• Seasoning:
• 2 tbsp – soy sauce
• 1 tbsp – Sugar
• 1 tbsp – Garlic
• 1 1tbsp – Sesame seed oil
• 1 tbsp – chopped green Onion
• Ground black pepper
Method:
- Soak glass noodles for 30 mins.
- Soak shitake mushroom in water for 15 mins and cut off stem.
- Cut mushroom into thin strips.
- Cut beef into thin strips.
- Mix all the ingredients for seasoning and marinate beef and mushroom in a same bowl.
- Meanwhile, cut carrot and onion into thin strips.
- In a boiling water, cook spinach for 2 mins.
- Cool spinach in running water, and dry on paper towel.
- Season with salt and sesame seed oil.
- Whip egg. Add a little salt. Pour on griddle and fry.
- Once done, cut into thin strips.
- Heat oil in a deep pan and start cooking beef and mushrooms.
- When beef is cooked, add carrot, onion, spinach and noodles.
- Stir-fry until vegetables are cooked.
- Add egg strips and mix.
- Add a little bit of sesame seed oil and turn off the heat.
- Pour into a bowl, garnish with sesame seeds and serve hot
