Ingredients:

• Cooked Rice – 2 cups
• Grated green Mango – 1 cup
• Chopped Onions – 1/2 cup (optional)
• Salt – 2 tsp
• Chilli powder – 2 tsp
• Turmeric powder – 1 tsp
• Asafetida -1 pinch
• Mustard -1 tsp
• Oil – 2 to 3 tbsp
• Curry leaves – small bunch
• Fried Peanuts – a handful
• For Raitha:
• Yogurt – 1/2 cup
• Baby okras – 6 to 8

Method:

  1. Heat oil in a pan and add mustard, turmeric powder and asafoetida. After the mustard splutters, add chopped onions and fry till they turn golden brown.
  2. Add the grated mango, chilli powder and salt.
  3. Cook the mango till it becomes very soft.
  4. Now, add the cooked rice. Stir well and garnish with curry leaves.
  5. Sprinkle fried peanuts on top before serving.
