Ingredients:
• 1/4 cup – unsalted Butter
• 1/8 tsp – Garlic powder
• 12 slices – white bread
• 1 (8 ounce) package- shredded mozzarella cheese
• 1 tsp – dried Oregano
• For the Filling:
• 2 small Potatoes (boiled and mashed)
• 1 Onion (finely chopped)
• 1 Green chilli (finely chopped)
• 1 tbsp grated Ginger (or Ginger paste)
• 2 tbsps coriander/cilantro (finely chopped)
• 1 tsp Cumin seeds
• 2 tbsp oil
• salt (to taste)
• Red Chilli powder to taste
Method:
- For the filling:
- Heat oil in a pan, splutter cumin seeds. Add the chopped green chillies, onion and ginger, and stir fry.
- When the onion turns golden brown, add the mashed potatoes to it and stir. Mix everything together. Let it fry for some 5-10 minutes.
- Garnish with chopped cilantro/coriander.
- Keep the filling aside to cool.
- For the sandwiches:
- Preheat the oven’s broiler.
- Place 6 slices of bread on to a baking sheet.
- Spread a small handful of the mozzarella cheese over each slice.
- Add the filling. Top with the remaining 6 slices of bread.
- Mix together the butter and garlic powder.
- Brush some over the top of the sandwiches.
- Sprinkle with the dried oregano.
- Place the baking sheet under the broiler for 2 to 3 minutes or until golden brown.
- Remove the baking sheet from the broiler, flip the sandwiches, brush the other side with butter-garlic powder mix and sprinkle with oregano.
- Return to the broiler and cook until golden brown.
- Remove the sandwiches from the broiler. Place them on the serving plate.
- Cut the sandwiches diagonally and serve them hot with tomato sauce / ketchup/ or any chutney for dipping. Serve warm.
