Ingredients:

• 1/4 cup – unsalted Butter
• 1/8 tsp – Garlic powder
• 12 slices – white bread
• 1 (8 ounce) package- shredded mozzarella cheese
• 1 tsp – dried Oregano
• For the Filling:
• 2 small Potatoes (boiled and mashed)
• 1 Onion (finely chopped)
• 1 Green chilli (finely chopped)
• 1 tbsp grated Ginger (or Ginger paste)
• 2 tbsps coriander/cilantro (finely chopped)
• 1 tsp Cumin seeds
• 2 tbsp oil
• salt (to taste)
• Red Chilli powder to taste

Method:

  1. For the filling:
  2. Heat oil in a pan, splutter cumin seeds. Add the chopped green chillies, onion and ginger, and stir fry.
  3. When the onion turns golden brown, add the mashed potatoes to it and stir. Mix everything together. Let it fry for some 5-10 minutes.
  4. Garnish with chopped cilantro/coriander.
  5. Keep the filling aside to cool.
  6. For the sandwiches:
  7. Preheat the oven’s broiler.
  8. Place 6 slices of bread on to a baking sheet.
  9. Spread a small handful of the mozzarella cheese over each slice.
  10. Add the filling. Top with the remaining 6 slices of bread.
  11. Mix together the butter and garlic powder.
  12. Brush some over the top of the sandwiches.
  13. Sprinkle with the dried oregano.
  14. Place the baking sheet under the broiler for 2 to 3 minutes or until golden brown.
  15. Remove the baking sheet from the broiler, flip the sandwiches, brush the other side with butter-garlic powder mix and sprinkle with oregano.
  16. Return to the broiler and cook until golden brown.
  17. Remove the sandwiches from the broiler. Place them on the serving plate.
  18. Cut the sandwiches diagonally and serve them hot with tomato sauce / ketchup/ or any chutney for dipping. Serve warm.
