Ingredients:

• 100 g each – carrot, beans, cabbage, capsicum, cauliflower, onion, garlic, potatoes, tomatoes.
• 4 – pav bhaji bread.
• 1/2 tsp – Turmeric powder.
• Salt.
• 1/2 tbsp – cumin powder.
• 1/2 tbsp – coriander powder.
• 1.5 tbsp – pav bhaji masala.
• Butter to toast pav.

Method:

  1. Pressure cook the vegetables (carrot, cabbage, beans, cauliflower, potatoes) up to 4 to 5 whistles.
  2. In the frying pan, add some butter and oil and fry the onion and garlic till it turns light brown in colour.
  3. Add tomatoes, capsicum, salt and turmeric power. Fry for 5 minutes.
  4. Mash the cooked vegetables and add to frying pan.
  5. Add cumin and coriander powder, mix well with the onion, capsicum and tomatoes.
  6. Add half a glass of water if the masala is too thick.
  7. After 5 minutes, add the paav bhaji masala and mix well and cook covered for 2-3 minutes.
  8. Garnish with the coriander leaves and serve.
  9. Heat the paav and serve hot with lemon and onion.
