
Ingredients:
• Rava – 2 cups
• Onion – 1 (medium size, finely chopped )
• Green chillies (finely chopped) as per taste
• Coriander leaves (chopped)
• Buttermilk
• A pinch of soda (edible)
• Salt to taste
Method:
- For the batter: Mix the rava, chopped onions and green chillies with enough buttermilk to come together. (The mixture should be as thick as batter for uttapam).
- Remove lumps from the mixture and add salt to taste.
- Add water or a little buttermilk if the mixture is too thick and mix well.
- For the omelette: Heat pan on medium heat, pour 1/2 tsp of oil and spread evenly.
- Take 1/2 cup of the batter in a separate vessel and mix a little soda to it.
- When the pan is hot, pour the batter using a cup or ladle and spread like when making dosas.
- Cover the pan with a lid and cook on low flame for about 5 mins.
- Flip the omelette over when the edges of the omelette start turning brown and crispy.
- Pour 1/2 tsp of oil to the sides of the omelette if required.
- Serve garnished with coriander leaves.
