Ingredients:
• 1 liter – Milk Or 200 g – mawa (khoya)
• 100 g – Sugar
• ½ tsp – Cardamom powder
• few strands of Saffron
• a pinch of Nutmeg powder (optional)
Method:
- Boil the milk and start stirring from the very beginning to make thick mawa.
- When the mawa thickens add sugar.
- When the sugar is added the mawa will slightly loosen. Hence heat on a low flame.
- When sufficiently thick add cardamom powder, nutmeg powder and paste of saffron.
- Mix well and allow it to cool down.
- Knead (rub) the mawa well and make pedas.
- To make saffron paste:
- Soak a few strands of saffron in a tbsp of water or milk for about 5 minutes.
- Grind with a metal or stone pestle.
- If milk is used for preparing the paste then it has to be used up and cannot be kept for later use.
