Ingredients:
• 1.5 kg. lamb shanks
• 4 tbsp. oil
• 1†Cinnamon stick
• 350 gms. onions, diced
• 150 gms. dates, pitted
• 2 tbsp. Honey
• 1 tsp. black pepper
• ½ tsp. salt
• Toasted Almonds and sesame seeds, for garnish
Method:
- Place lamb, oil, cinnamon and onion in a heavy saucepan and sauté for 30 seconds on high heat.
- Add enough water to cover the meat.
- Bring to a boil and simmer gently for about 2 hours.
- Remove lamb and reduce liquid to 2 cups by simmering further.
- Return lamb, add dates and honey. Simmer for about 20 mins.
- Check seasoning and remove from heat.
- Garnish with almonds and sesame seeds and serve.
