Ingredients:
• 1 cup – Cooked black-eyed peas
• 1 cup – Lauki/bottle gourd/surakaai (chopped)
• 1 – Onion (chopped)
• 1 – Tomato (chopped)
• 2 – Green chillies (slit opened)
• 2 each – Bay leaves, cloves, Cinnamon sticks, and Cardamom
• 1 tsp – Ginger-garlic paste
• 1/2 tsp – Garam Masala
• 1 tsp – Coriander powder
• 1/4 tsp – Red Chilli powder
• 2 tbsp – Coriander leaves (chopped)
• Salt
• 1 tbsp – Olive oil
• To Grind:
• 1 cup – Yogurt
• 1 tbsp – Poppy Seeds
• 5 – Almonds
Method:
- Grind the ingredients in the To Grind section into a fine paste and keep aside.
- Heat the olive oil and fry the bay leaves, cinnamon sticks, cloves, and cardamom till it browns.
- Add the onions, tomatoes, ginger garlic paste, and green chillies and saute until they are well cooked.
- Add the chopped lauki and black-eyed peas to this and stir continuously until the lauki pieces are about half cooked.
- Add garam masala powder, salt, chilli powder, and coriander powder and stir continuously for a few minutes.
- Finally add the ground paste, chopped coriander leaves and enough water.
- Cook for a few minutes until the oil separates.
- Serve hot.
