Ingredients:

• Button mushrooms, cut into quarters – 2 cup
• Low fat paneer, cut into 1 cm cubes – 1 cup
• Soya or Rice bran oil – 2 tsp
• Garlic – 1 tsp, mined
• Green Capsicum – 1/2 cup, diced
• Red Capsicum – 1/2 cup, diced
• Spring onion – 1 cup, chopped
• Malt Vinegar – 2 tsp
• Soya sauce – 2 tsp
• Chilli sauce – 2 tsp
• Salt to taste

Method:

  1. Heat the oil in a non-stick fry pan.
  2. Add garlic and fry till dark brown.
  3. Add capsicums and mushroom.
  4. Sprinkle with little salt and keep covered on low heat till the vegetables are crisp.
  5. Add paneer and spring onion.
  6. Cook stirring for 1 minute.
  7. Add rest of the ingredients.
  8. Cook stirring for 1 minute.
  9. Serve hot with whole wheat pasta.
