Ingredients:
• Button mushrooms, cut into quarters – 2 cup
• Low fat paneer, cut into 1 cm cubes – 1 cup
• Soya or Rice bran oil – 2 tsp
• Garlic – 1 tsp, mined
• Green Capsicum – 1/2 cup, diced
• Red Capsicum – 1/2 cup, diced
• Spring onion – 1 cup, chopped
• Malt Vinegar – 2 tsp
• Soya sauce – 2 tsp
• Chilli sauce – 2 tsp
• Salt to taste
Method:
- Heat the oil in a non-stick fry pan.
- Add garlic and fry till dark brown.
- Add capsicums and mushroom.
- Sprinkle with little salt and keep covered on low heat till the vegetables are crisp.
- Add paneer and spring onion.
- Cook stirring for 1 minute.
- Add rest of the ingredients.
- Cook stirring for 1 minute.
- Serve hot with whole wheat pasta.
