Ingredients:

• 250 g – Paneer (chopped in cubes)
• 1 cup – fresh con kernels, boiled or microwaved till soft
• 1 – small capsicum, deseeded, chopped
• 2 sprigs – Mint leaves, finely chopped
• 1 flake – garlic, crushed finely
• 1 – green chilli, finely chopped
• 1 tbsp – coriander leaves, finely chopped
• 1 sprig – spring onions, finely chopped
• 1 tbsp – paneer, grated
• 2 tbsp – fresh thick curds
• 1/2 tsp – Lemon juice
• Salt to taste
• 1 tsp – Olive
• 1 tbsp – oil

Method:

  1. Put paneer pieces in a glass bowl.
  2. In a small cup mix olive oil, salt, mint, coriander.
  3. Add curds, green chilli, mint, garlic, stir well, to blend.
  4. Pour marinade on paneer, toss till all pieces are well coated.
  5. Cover and keep aside for 10 minutes or till required.
  6. Heat oil in a deep frying pan, add ginger, stir-fry for a minute.
  7. Add boiled corn kernels, capsicum and marinated paneer, stir-fry for 2-3 minutes.
  8. Pour into serving dish.
  9. Garnish with chopped spring onion and grated paneer.
  10. Serve piping hot, with naan, paratha, etc.
