Ingredients:
• 250 g – Paneer (chopped in cubes)
• 1 cup – fresh con kernels, boiled or microwaved till soft
• 1 – small capsicum, deseeded, chopped
• 2 sprigs – Mint leaves, finely chopped
• 1 flake – garlic, crushed finely
• 1 – green chilli, finely chopped
• 1 tbsp – coriander leaves, finely chopped
• 1 sprig – spring onions, finely chopped
• 1 tbsp – paneer, grated
• 2 tbsp – fresh thick curds
• 1/2 tsp – Lemon juice
• Salt to taste
• 1 tsp – Olive
• 1 tbsp – oil
Method:
- Put paneer pieces in a glass bowl.
- In a small cup mix olive oil, salt, mint, coriander.
- Add curds, green chilli, mint, garlic, stir well, to blend.
- Pour marinade on paneer, toss till all pieces are well coated.
- Cover and keep aside for 10 minutes or till required.
- Heat oil in a deep frying pan, add ginger, stir-fry for a minute.
- Add boiled corn kernels, capsicum and marinated paneer, stir-fry for 2-3 minutes.
- Pour into serving dish.
- Garnish with chopped spring onion and grated paneer.
- Serve piping hot, with naan, paratha, etc.
