
Ingredients:
• 1 box – Spanish Rice
• 1 can or 14.5 – Tomatoes
• 1 can – refried beans
• 1 packet – firm Tofu
• 2 cups – soy cheese
• 1 packet – taco seasoning (check ingredients)
• 1 bag – tortilla chips
Method:
- Cook rice according to the instructions on the box and mix in tomatoes.
- Fry the tofu and then add taco seasoning and a little water.
- In a medium casserole dish, crunch up tortillas in the bottom, then layer with beans and tofu. The rice will be on top with soy cheese and more tortilla chips.
- Bake at 350 degree Celsius for about 20 minutes.
