Ingredients:

• 1 box – Spanish Rice
• 1 can or 14.5 – Tomatoes
• 1 can – refried beans
• 1 packet – firm Tofu
• 2 cups – soy cheese
• 1 packet – taco seasoning (check ingredients)
• 1 bag – tortilla chips

Method:

  1. Cook rice according to the instructions on the box and mix in tomatoes.
  2. Fry the tofu and then add taco seasoning and a little water.
  3. In a medium casserole dish, crunch up tortillas in the bottom, then layer with beans and tofu. The rice will be on top with soy cheese and more tortilla chips.
  4. Bake at 350 degree Celsius for about 20 minutes.
