Ingredients:

• Round Brinjal – 200 g
• Frozen peas – 100 g
• Onions – 2
• Tomato puree – 2 tbsp
• Salt – 1 tsp
• Red Chilli powder – 1/2 tsp
• Coriander seeds, semi crushed – 1 tbsp
• Oil – 1 tbsp

Method:

  1. Prick the brinjal with a fork and roast it in a microwave for 3 mins.
  2. Remove the skin with water and crush it and keep aside.
  3. Put oil in the microwave pan and add coriander seeds, onions, salt, chilli powder and tomato puree.
  4. Heat it on high temp for five minutes.
  5. Then add brinjal and peas. Put it back in the oven for three mins. Serve.
