Ingredients:
• Round Brinjal – 200 g
• Frozen peas – 100 g
• Onions – 2
• Tomato puree – 2 tbsp
• Salt – 1 tsp
• Red Chilli powder – 1/2 tsp
• Coriander seeds, semi crushed – 1 tbsp
• Oil – 1 tbsp
Method:
- Prick the brinjal with a fork and roast it in a microwave for 3 mins.
- Remove the skin with water and crush it and keep aside.
- Put oil in the microwave pan and add coriander seeds, onions, salt, chilli powder and tomato puree.
- Heat it on high temp for five minutes.
- Then add brinjal and peas. Put it back in the oven for three mins. Serve.
