Ingredients:
• 2 cups thotakura (amaranth leaves), chopped fine, including tender stems
• Salt
• 8 crushed Garlic Cloves (husk removed)
• 1/4 tsp – green chillies, chopped fine
• 1/4 tsp – Red Chillies (broken into pieces)
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – cumin/jeera
• 2 tbsp – fried ground nut powder
• 2-3 tsp – oil
• 1 tbsp – chopped Onion
• Turmeric powder/haldi, a pinch
• 8 Curry leaves
Method:
- Put oil in a microwave safe bowl, add mustard, jeera, red chilli, garlic, haldi and curry leaves.
- Micro high for 2 mins.
- Add chopped chilli and onion, mix well and micro high for 2 mins.
- Add chopped greens, mix well on high for 6 mins.
- Stir once every 2 mins (with lid for first 4 min).
- Remove and sprinkle groundnut powder, mix well and allow standing time.
- Serve with chapatti/poori/plain rice.
