
Ingredients:
• 2 tbsp. Sunflower oil
• 200 gms. sliced Onion
• 1 Clove garlic, chopped
• 2 tsp. Cumin seeds
• 1 tsp. ground Turmeric
• 1 tsp. mild chilli powder
• 400 gms. tomatoes, chopped
• 1 large potato, cubed
• 200 gms. Cauliflower florets
• 100 gms. ladies finger, trimmed
• 2 tbsp. Lemon juice
Method:
- Put the oil, onion and garlic in a microwave proof bowl, cover and cook on high for five minutes.
- Add cumin seeds, turmeric, chilli and chopped tomatoes. Cook for a further five minutes.
- Stir in the potatoes, cauliflower, okra, lemon juice and seasoning.
- Cook for 15 minutes. until vegetables are tender.
- Spoon into serving dishes.
- Serve with yoghurt and pickles.
