Ingredients:

• 3 cups – All-purpose flour
• 2 tsp – Active Dry yeast
• 1/2 tsp – Sugar
• 1 tsp – Salt
• 1/2 cup – Luke warm water
• 3 tbsp – Olive oil
• Mixed veggies and Paneer stuffing:
• 1 cup – Potatoes (chopped)
• 1 cup – Scrambled Paneer
• 1 cup – Mushrooms (chopped)
• 1/2 cup – Green bell pepper (chopped)
• 1/4 tsp – Cumin seeds
• 1 tsp – Garam Masala powder
• 1 – Onion (big and chopped)
• 2 – Green chillies (chopped)
• Salt
• Oil

Method:

  1. Mix the yeast, sugar and salt in Luke warm water.
  2. Keep aside for 5 minutes until the yeast turns foamy.
  3. Take the flour in a large vessel and add gradually the foamy yeast and olive oil.
  4. Knead everything as smooth and soft dough.
  5. Arrange the dough in a greased bowl. Keep in a warm place for at least two hours and let the dough double in volume.
  6. Heat oil in a pan. Let the cumin seeds crackle.
  7. Immediately add the chopped onions and chopped green chillies.
  8. Saute until the onions turns translucent.
  9. Immediately add the chopped mushrooms and chopped potatoes.
  10. Saute everything for few minutes.
  11. Now add the chopped green bell pepper with garam masala powder and salt.
  12. Cook everything on simmer until the vegetables get well cooked. (Sprinkle water if needed)
  13. Finally, add the scrambled paneer.
  14. Give a quick stir and put off the stove.
  15. Keep aside and let the masala get cool completely.
  16. Preheat the oven to 350 degrees F and line a baking sheet over a baking tray.
  17. Punch down the dough and make 10-12 medium sized balls.
  18. Flatten them with a rolling pin as a small thick disc.
  19. Place the already prepared masala in the dough.
  20. Shape the dough as buns. Arrange the stuffed buns over the baking tray and bake in middle rack for 20-25 minutes until the crust turns golden brown.
