Ingredients:

• 1 cup – radish, grated and tightly packed
• 3/4 tsp – Red Chilli powder
• 1/4 tsp – Garam Masala powder
• 1/8 tsp – Turmeric powder
• 1 – green chilli, chopped
• 3 tbsp – coriander leaves, chopped
• 1/2 tsp – ginger, grated
• 1 tsp – cumin seeds/jeera
• salt as needed
• 1 tsp – oil/ghee
• For dough: 1 cup – atta/wheat flour
• salt and water as needed
• 1 tbsp – oil

Method:

  1. Mix radish with salt and turmeric in a plate and let the water drain away.
  2. Make dough in the same way we do for rotis. Set aside, covered.
  3. Now squeeze the excess water from the radish mixture thoroughly.
  4. Heat a pan with oil and splutter jeera, add green chilli, ginger and fry well.
  5. Add the squeezed radish, coriander leaves, garam masala and red chilli powder.
  6. Mix and fry well till all the moisture evaporates.
  7. Now make equal sized, lemon sized balls out of the dough and the stuffing.
  8. Dust the dough balls liberally and roll out half way. Keep the stuffing ball inside and seal the ends towards the centre.
  9. Again dust this in flour and roll out immediately.
  10. Heat the tawa and cook on both sides with a little oil till golden brown spots appear.
  11. Serve with boondi raita or pickle of your choice.
