Ingredients:

• 2 cups – balloon vine greens / mudaikathan keerai
• 2 cups – parboiled Rice
• 3 – Green chillies
• 1 cup – Curd
• Salt to taste.

Method:

  1. Soak rice in water for at least two hours. Clean the greens and measure two full cups.
  2. Grind soaked rice along with greens, chillies, curd and salt into a fine batter.
  3. Allow this batter to ferment overnight.
  4. Add enough water to the batter so as to make dosa.
  5. Heat the skillet and pour a ladle full of batter, add a spoon of oil to roast.
  6. Turn the dosa and roast it on the other side too.
  7. Serve.
