Ingredients:

• 750 g – diced lamb
• 3 – onions, finely chopped
• 150 g – oil
• 20 – Saffron strands
• 500 g – spinach, finely chopped
• 1 pinch – baking soda
• 2 – eggs, beaten
• 5 – Cloves
• 1/2 ” long – Cinnamon stick
• 1/2 tsp – green Cardamom powder
• 2 tsp – coriander powder
• 2 tsp – chilli powder
• 1 inch long – Ginger piece, finely chopped
• salt to taste

Method:

  1. Heat the oil and fry the onions.
  2. Then add the meat and fry for 10 mins.
  3. Add water and cook till the meat is tender.
  4. Add saffron, cloves, cinnamon, cardamom, coriander powder, chilli powder and ginger.
  5. Cook for 5 mins.
  6. Heat oil in another pan.
  7. Add the spinach and the baking soda.
  8. Fry till it becomes tender.
  9. Add the beaten eggs and salt to taste.
  10. Cook till uniformly mixed.
  11. Add the cooked meat on the spinach and cook for another 5 mins.
  12. Garnish with sliced onion, green chilli and lemon.
  13. Serve hot.
