Ingredients:
• 1 kg – New Zealand lamb chops
• 200 g – Zucchini
• 200 g – yellow squash
• 100 g – Carrot
• 100 g – colour pepper
• 200 g – Broccoli
• 50 ml – brown sauce
• 25 ml – Olive oil
• 25 g – chopped herbs
• 50 g – sliced Onion
• 25 ml – red wine
• salt and pepper to taste
Method:
- Marinate the lamb chops with olive oil, chopped herbs, salt and pepper. Keep aside for 10 min.
- Marinate the vegetables and grill it.
- Grill the lamb chops to the desired doneness.
- Arrange the grilled vegetables and lamb chops in a plate.
- Pour the rich onion sauce. Garnish with colour peppers and carrot juliennes.
- For rich onion sauce:
- Saute the sliced onion.
- Add red wine and reduce it.
- Add brown sauce and add seasonings.
