Ingredients:

• 200 g – quick cooking Wheat noodles
• 3 tbsp – oil
• 1 cup – carrots, sliced long and thin
• Tomatoes – 2 sliced, deseeded
• 1-big – onion, sliced
• Cream – 1 tbsp
• 2 tsp – soya sauce
• For masala:
• 1 small cup – Coconut
• 2 tsp – yogurt
• 2 Cloves – Garlic
• 1 small – Onion
• Peanuts – a handful
• 2 tsp – curry powder
• 1 – Green chilli
• Salt to taste
• 3 tsp – Lemon juice
• A few ounces of water – to grind masala

Method:

  1. Boil quick cooking wheat noodles with little salt and 1 tsp oil in required amount of water for 2-3 mins.
  2. Drain and keep aside.
  3. Grind coconut, yogurt, garlic, onion, peanuts, curry powder, green chilli, lemon juice and required water, into a paste.
  4. In a non-stick wok heat oil and add onions, toss and add carrots.
  5. When carrots become tender, add tomatoes and the paste prepared and cook well till raw flavour goes.
  6. Now add the noodles and toss well add soya sauce mix well.
  7. Finally add little cream and remove from stove.
