Ingredients:

• 1.25 cups – margarine
• 3/4 cup – firmly packed Brown sugar
• 1/2 cup – white Sugar
• 1 – egg, lightly beaten
• 1 tsp – vanilla extract
• 1.5 cups – all-purpose flour
• 1 tsp – baking soda
• 1/2 tsp – salt
• 1 tsp – ground Cinnamon
• 1/4 tsp – ground Nutmeg
• 1/8 tsp – ground Cloves
• 3 cups – rolled oats
• 2 – ripe bananas, sliced
• 1.5 cups – Raisins
• 1 cup – flaked Coconut

Method:

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  2. In a large bowl, cream together the margarine, brown sugar and white sugar.
  3. Beat in the egg and vanilla. Combine the flour, baking soda, salt, cinnamon, nutmeg and cloves.
  4. Stir into the creamed mixture until well blended.
  5. Stir in the oats, bananas, raisins and coconut, one at a time using a wooden spoon.
  6. Drop by rounded spoonful – 2 inches apart – on to the prepared cookie sheet.
  7. Bake for 11 to 13 minutes in the preheated oven.
  8. Allow cookies to cool on baking sheet for 1 minute before removing to a wire rack to cool completely.
