Ingredients:

• Ginger (Preferably the reddish, thread less variety) – 250 g
• Lemon Juice – 100 ml
• Salt – 1.5 tsp
• Chilli flakes (optional) – 3/4 tsp

Method:

  1. Peel and slice ginger into 1-inch strips. Put them in a dry sterilized glass bottle.
  2. Add juice of about 4 to 5 limes or lemons, roughly enough to cover the ginger.
  3. Add salt and chilli flakes.
  4. Keep it in the sun or near a heat source for about 5 days.
  5. It is ready to eat.
