Ingredients:
• 1 tin – chickpeas, rinsed
• 1 tin – kidney beans, rinsed
• 2 sticks – celery, finely chopped
• 1 cup – sweet Corn kernels
• 1 – red pepper, finely chopped
• 1 – red onion, finely chopped
• 2 – red chillies, finely chopped
• A small bunch – fresh coriander, coarsely chopped
• Salt and pepper
• For Dressing:
• 2 – Garlic cloves, minced
• 3 tsp – ground cumin, toasted
• 3 tsp – ground coriander, toasted
• 4 fl oz – red wine Vinegar
• 10-12 fl oz – extra virgin Olive oil
Method:
- Mix all the ingredients in a big bowl.
- To make dressing mix garlic and spices together to make paste.
- Gradually pour in vinegar & oil.
- Season with salt & pepper.
