Ingredients:

• 1 cup – basmati Rice
• 1 tsp – ginger-garlic paste
• 1 tsp – cumin
• 1 tsp – Garam Masala
• 1 tsp – black pepper powder
• Salt to taste
• 1 tsp – Ghee
• Oil
• 1/2 cup – vegetables (mixture of peas, beans, carrot, capsicum, cabbage)
• 1/2 tsp – kasoori Methi
• 1 – onion, chopped finely

Method:

  1. Wash and soak basmati rice in water for 10 mins.
  2. Heat oil and add cumin.
  3. When it splutters, add onion and saute till transparent.
  4. Add ginger-garlic paste and fry till fragrant.
  5. Add chopped vegetables and saute.
  6. Add salt, pepper powder, garam masala and saute till it emanates an aroma.
  7. In a microwave-safe dish, mix the sauteed vegetables with the soaked rice.
  8. Add ghee and water and microwave on high for 15 mins.
  9. Serve hot with onion raitha and chips.
