Ingredients:

• 3 tbsp – Lemon custard powder
• 3/4 cup – Sugar
• 1 litre – Milk
• 1 – orange, segments peeled and deseeded
• 1 – apple, peeled, diced
• 1 – banana, peeled, diced
• 1 – sweet lime, segmented, peeled
• 1 tsp – powdered Sugar
• 1 tsp – Lemon juice
• 1 tbsp – candied or finely grated Orange rind
• 2 pinches – salt

Method:

  1. Dissolve custard powder in 1/2 cup cold milk. Put remaining milk to boil with sugar.
  2. Simmer for 5 mins and stir in custard mixture.
  3. Simmer for 2-3 mins, stirring continuously.
  4. When thick enough to coat back of a spoon thickly, take off fire.
  5. Cool to room temperature and stir well.
  6. Refrigerate, allow to chill well and remove.
  7. Beat till smooth and fold in orange rind. Transfer back to chiller.
  8. Put chopped fruit in a large bowl.
  9. Pour lemon juice over them.
  10. Add powdered sugar, salt and toss lightly. Chill in refrigerator till required.
  11. To serve, divide fruit between four individual bowls.
  12. Pour custard to top bowl to brim.
  13. Sprinkle candied rind, or just a bit of grated orange rind.
  14. Serve chilled.
