Ingredients:

• 2 cups – Basmati Rice (cooked)
• 1 cup – Paneer cubes
• 1 cup – Cooked Chickpeas
• 1 tsp – Shah Jeera
• 1 – Onion (chopped lengthwise)
• 3 Green chillies (slit opened)
• 1 tsp – Garam Masala powder
• 1/2 tsp – Cumin powder
• 1/2 tsp – Pepper powder
• Salt
• 1/2 cup- Mint leaves (chopped)
• Oil

Method:

  1. Heat enough oil in a large pan, add the shah jeera and let them splutter.
  2. Add chopped onions and stir until they turn translucent.
  3. Now add the slit green chillies and chopped mint leaves. Saute until the mint leaves shrivel.
  4. Meanwhile, heat oil and fry the paneer pieces on both sides until they turn golden brown. Keep aside.
  5. Add the garam masala powder, cumin powder, pepper powder to the cooking vegetables and toss until the spice powders get well mixed.
  6. Now add the already cooked basmati rice, fried paneer pieces to the pan and toss everything gently.
  7. Serve hot with any spicy side dish.
