Ingredients:
• 2 cups – basmati Rice (or long grained Rice)
• 1 cup – Sugar
• 2 cups – water
• 1/2 cup – Milk
• 3 – Cloves
• 2 inch – Cinnamon stick
• 3 – green Cardamoms
• 3 tsp – Ghee
• 6 — Pistachios
• 6 – Almonds
• Few – Saffron strands
• Pinch – yellow food colour
Method:
- Wash and soak the rice for 15 minutes.
- In a pan, take sugar with enough water to cover it, and make a sugar syrup.
- In a heavy bottomed pan, heat the ghee, add the cinnamon, cloves and cardamom.
- Fry for few minutes.
- Add the drained rice and 2 cups of water.
- Once the water starts drying, add the sugar syrup, milk, yellow food colour and saffron strands.
- Cover and cook on simmer.
- Heat a teaspoon of ghee and roast half the nuts.
- Add it to the cooking rice.
- Once the rice is cooked, take off the heat.
