
Ingredients:
• Brinjal (small eggplant) – 4
• Onions – 2
• Tomatoes – 2
• Green chillies – 2
• Grated Coconut – 1/4 cup
• Tamarind- small, Lime size
• Small Onions – 3
• Oil – 1 tbsp
• Turmeric powder – little
• Mustard seeds, Venthayam, Salt
• Curry leaves
• Dried red chillies – 3
Method:
- Cut onions, brinjal, tomatoes, and green chillies to long pieces. Grind small onions, coconut, dried red chillies, and turmeric powder in a mixer.
- Soak tamarind in little water and take the concentrated juice out.
- Heat oil and add mustard seeds, venthayam, and curry leaves. Wait till the seeds pop.
- Add onions, tomatoes, brinjal, and green chillies and fry for a minute.
- Add tamarind juice and salt.
- After the vegetables get cooked, add the ground mix and keep stirring. After two minutes the bringal avial is ready for serving. Tastes good as a side dish with rasam or curd rice.
