
Ingredients:
• 4 medium – Bell peppers of any colour
• 200g – Paneer cubes (small)
• 100g -Green peas
• 1 – Medium finely chopped Onion
• 1 – Medium sized potato, cut into small cubes
• 1 – Carrot, cut into small cubes
• 2 – Green chillies, chopped
• 1/2 bunch – Coriander leaves
• 1/4 tsp – Red-chilli powder
• 1/4 tsp – Turmeric powder
• 1/4 tsp – Cumin powder
• 1/4 tsp – Pepper powder
• Salt to taste
• Cooking oil
• 2 tbsp – Butter
• A roll of thick thread
Method:
- Add turmeric to a bowl of water and soak the paneer in it
- Heat oil in a pan and saute the onions until pink
- Add the chillies and the powdered spices and fry it well
- Add the potatoes and carrots with 1/4 cup water and cook for 5 mins
- In the meanwhile drain out the paneer
- Add the paneer to the vegetables
- Add the salt
- Cook for 5 mins and add the chopped leaves
- Cook on a slow fire till it dries up
- Now cut the top of the capsicum in the manner of a lid and keep the cut portion aside
- Empty the capsicums gently
- Apply the butter inside out
- Now fill the capsicums with the cooked mixture
- Cover these with the lids and secure the lid with some thread
- Grease a pan and shallow fry the stuffed bell-peppers
- Sprinkle some salt on them
- Cover and cook until soft
- Remove the threads and serve hot.
