
Ingredients:
• 1 cup – Basmati rice.
• 1 – green/ Red/Yellow/Orange pepper, medium, cut into thin long pieces.
• 1 – Onion, medium, cut into thin long slices.
• 1 tsp – Cumin seeds (jeera).
• 1 tbsp – Cooking oil (can be vegetable/canola/ even Olive oil).
• 1/2 – 3/4 tsp – chilli powder.
• Salt to taste.
Method:
- Wash the rice well and boil it with two cups of water. Reduce heat to medium / low flame and cover and cook until done (about 10 minutes).
- Then, heat the oil in a heavy-bottomed wok and crackle the cumin seeds and then add onions and fry until it becomes transparent.
- Add pepper and fry another 2-4 minutes on high heat.
- Add salt just enough for the vegetables and mix well.
- Add the cooked (separated) rice to the vegetables and mix well.
- Add chilli powder and salt to taste and mix well.
- Can also add about half a cup of cooked sweet corn or pomegranate seeds finally to make the rice look colourful.
