Ingredients:
• 5 – large Potatoes.
• 2 – Celery Stalks.
• 1 packet – Frozen Mixed Vegetables.
• 1 can – Pineapple chunks.
• 1 – large Onion.
• 1 tbsp – Mustard, ground.
• 4 tbsp – Mayonnaise.
• 1 tbsp – Sugar.
• 1 tsp – Vinegar.
Method:
- Dice potatoes and cook until tender but not too soft.
- Add frozen vegetables when the potatoes are almost done. Drain and run cold water on it.
- Chop onions, celery. In a large bowl mix all of these ingredients (onions, celery, salt and pepper to taste, ground mustard, pineapples).
- Now add the drained potatoes and frozen vegetables. Mix well. Be careful not to mash.
- Then add mayonnaise and stir until mixed well.
- Place in a fancy bowl garnish with paprika and a sprig of parsley. Refrigerate.
