Ingredients:

• 2 cups – Rice
• 1 cup – Sugar
• 1/2 cup – water
• 1/2 cup – Ghee
• 1/2 cup – warm Milk
• 2 – pineapples, peeled, cored and diced
• 1 tbsp – Garam Masala
• Boiling water
• 1/2 tsp – Saffron
• 1/2 tsp – salt
• 1 tbsp – ground Almonds

Method:

  1. Soak saffron in milk and set aside. Simmer pineapple with sugar in water until thick syrup is formed. Melt ghee, stir in garam masala and fry for a few minutes.
  2. Stir in rice until coated with ghee, add sufficient boiling water so it comes 2.5 cm above rice.
  3. Season with salt, cover and simmer for 15-20 mins until all liquid is absorbed.
  4. Stir in pineapple and syrup.
  5. Add almonds to saffron and milk and pour over the rice.
