Ingredients:
• 1/2 kg – kovakai (aka tindora, dhondakai)
• 1 – Potatoes
• 5 pods – Garlic
• 1/2 inch – Ginger
• 1.5 tsp – chilli powder
• 1.5 tsp – salt
• 1/4 tsp – fennel seeds/cumin
• 1/2 tsp – Haldi
• 1/2 tsp – Mustard Seeds
• 1-2 cups – oil
Method:
- Heat the mustard and fennel seeds in oil.
- Add mashed garlic and ginger to the mustard when it sputters.
- Then, add haldi powder and chilli powder to it.
- Slit the tindora vertically and cut the potato into cubes.
- Fry potatoes in oil and then add tindora to it.
- Add salt to taste.
- Sprinkle water and put a lid on the vessel and allow it to cook for 6 minutes.
- Remove lid and add 2 tsp of oil and mix well and fry it for 4-5 minutes.
