Ingredients:

• 1 cup – Rice/raw Rice
• 2 medium – Potato
• 1 medium – green bell pepper (capsicum)
• 1/4 cup – carrot, chopped
• 2 tbsp – spring onion, chopped
• Salt
• 1/2 tsp – Turmeric powder
• 1.5 tsp – sambar powder
• 1 tsp – Garam Masala powder
• 1 – slit Green chilli
• 4 tbsp – oil
• 1 tsp – jeera/cumin

Method:

  1. Cook rice in 2 3/4 cups of water and set aside. Heat oil in a pan. Add cumin/jeera.
  2. When they crackle, add chopped potatoes and green chilli.
  3. Sprinkle salt and saute till potatoes are partially cooked.
  4. Add chopped carrot, bell pepper, turmeric powder, sambar powder, garam masala powder and some salt.
  5. Saute till the vegetables are cooked.
  6. Gently toss rice with the vegetables without mashing the rice.
  7. Add salt if needed.
  8. Garnish with spring onion.
  9. Serve with raitha or chips.
