
Ingredients:
• 1 – Eggplant
• 10 – button Mushrooms
• 1/2 cup – Green peas
• 2 – Onions
• 2 inch piece – Ginger
• 6 – Garlic flakes
• 2 -tomato
• Oil – 1 tbsp
• Salt to taste
• Garam Masala – 1/2 tsp
• Red Chilli powder – 1/4 tsp
Method:
- Roast the eggplant in an oven. Peel off the skin and churn it in a blender.
- In a kadhai heat oil. Fry onions till golden, add ginger and garlic paste to it.
- Saute for some time then add the mushroom and green peas. Add salt, chilli powder, garam masala and tomato.
- Cook for 4 minutes and then add the roasted eggplant and cook for another 3 mins.
- Serve.
