Ingredients:

• 1 – Eggplant
• 10 – button Mushrooms
• 1/2 cup – Green peas
• 2 – Onions
• 2 inch piece – Ginger
• 6 – Garlic flakes
• 2 -tomato
• Oil – 1 tbsp
• Salt to taste
• Garam Masala – 1/2 tsp
• Red Chilli powder – 1/4 tsp

Method:

  1. Roast the eggplant in an oven. Peel off the skin and churn it in a blender.
  2. In a kadhai heat oil. Fry onions till golden, add ginger and garlic paste to it.
  3. Saute for some time then add the mushroom and green peas. Add salt, chilli powder, garam masala and tomato.
  4. Cook for 4 minutes and then add the roasted eggplant and cook for another 3 mins.
  5. Serve.
