
Ingredients:
• Red bean – 1 cup (soak or canned)
• 4 to 5 Cloves – Garlic
• 1 – tomato, finely chopped
• 1 – Onion
• 1/2 – red bell and green bell pepper, chopped
• Coriander leaves (chopped)
• Chilli powder – to taste
• 4 – tortillas
Method:
- Pressure cook the beans until buttery.
- Heat the oil in a skillet. Saute the onion, red bell pepper, green bell pepper, garlic until soft.
- Add the cooked beans, salt, tomatoes, coriander leaves, chilli powder and cook well until it becomes soft and mashed.
- To serve, spoon bean mixture in the centre of each tortilla.
- Roll up and place in a oven or microwave for 2 minutes.
- Serve hot.
