Ingredients:

• 1 cup – thick Mango juice
• 1 cup – Sugar
• 1 cup – water
• 3/4 tsp – citric acid
• 1/8 tsp – potassium metabisulphite

Method:

  1. Put mango juice in a deep vessel.
  2. Heat for 2-3 minutes, stirring continuously.
  3. Take off and allow to cool.
  4. Meanwhile, put sugar and water to boil.
  5. When sugar is dissolved, simmer to make a syrup of one thread consistency.
  6. Take off fire, add citric acid and stir and dissolve.
  7. Add to mango pulp and stir to mix well.
  8. Dissolve KMS in half a tsp of water.
  9. Add to the mixture and stir well.
  10. Bottle in sterilised sauce bottles.
