Ingredients:

• 1 – whole leg of lamb
• 3 – large Potatoes
• 1 tbsp – Vinegar
• 2 tsp – pepper
• 4 – large onions, each chopped into 4 pieces
• 2 – red chillies, broken into bits
• 2 – Cloves
• 2 – Cinnamon
• Salt – to taste

Method:

  1. Wash the mutton leg and make deep cuts on it.
  2. Rub it well all over with the salt, pepper and vinegar.
  3. Place it in a big baking pan. Add the potatoes, onions, red chillies, cinnamon, cloves and sufficient water.
  4. Cover with aluminium foil and bake in a moderate oven for about 1 hour 15 minutes or till the meat is tender.
  5. Remove the foil and continue roasting till the meat is nice and brown and the potatoes too are roasted well.
  6. Serve hot or cold with bread or with spiced rice.
