Ingredients:
• 1 – whole leg of lamb
• 3 – large Potatoes
• 1 tbsp – Vinegar
• 2 tsp – pepper
• 4 – large onions, each chopped into 4 pieces
• 2 – red chillies, broken into bits
• 2 – Cloves
• 2 – Cinnamon
• Salt – to taste
Method:
- Wash the mutton leg and make deep cuts on it.
- Rub it well all over with the salt, pepper and vinegar.
- Place it in a big baking pan. Add the potatoes, onions, red chillies, cinnamon, cloves and sufficient water.
- Cover with aluminium foil and bake in a moderate oven for about 1 hour 15 minutes or till the meat is tender.
- Remove the foil and continue roasting till the meat is nice and brown and the potatoes too are roasted well.
- Serve hot or cold with bread or with spiced rice.
