Ingredients:
• 2 cups – basmati Rice
• 1 – whole baby chicken, cut into bite size pieces
• 1 tsp – pepper powder
• 2 tsp – Saudi kabsa spice mix
• 1 – onion, sliced (optional)
• mixed fruit and nuts like cashew, almonds, sultanas or Raisins
• Salt – as required
• 2 tbsp – Olive oil or Ghee
• For kabsa spice mix:
• Turmeric
• Red Chilli
• Whole Black Peppercorns
• Ginger(use powder or fresh)
• Whole Cloves
• Black Cardamom pods
• Coriander seeds
Method:
- Wash the chicken well and cut into pieces.
- Rub the chicken pieces in salt and pepper.
- Heat the oil in a pan, fry the nuts, fruits and set aside.
- Then fry the sliced onions and set it aside.
- Now fry the chicken pieces in same oil.
- Once they slightly brown on each side, add the kabsa spice mix and mix well.
- Add some water and cover the pan.
- Keep the heat in medium and cook, till the chicken gets cooked.
- Once the chicken is completely cooked, add the washed rice, 4 cups of water and salt to taste.
- Cover the pan, cook in medium heat, until the rice is cooked.
- When serving the rice, sprinkle the nuts and fried onions on top.
- Serve the rice warm, with yogurt and salad.
