Ingredients:
• 400 gms – premium shrimps
• 1 whole green pepper (capsicum)
• 1 whole red pepper (capsicum)
• 1 Onion
• 1 bunch Spring onions
• 50 gms – Mushrooms
• 100 gms – beansprouts
• 1.5 Cucumber
• 2 Cloves Garlic
• 60 ml – Olive oil
• 30 ml – soya sauce
Method:
- Defrost the shrimps and marinate in a little lemon juice and salt for 15 mins.
- Chop the onions and dice the spring onions, mushrooms and garlic.
- Cut the green and red peppers and cucumber into strips.
- Heat the oil in a wok or deep frying pan, add onions and garlic and fry for 1 minute.
- Add the cucumber, mushrooms, green and red peppers, beansprouts and stir for 1 minute.
- Add the soya sauce and spring onions.
- Finally add the shrimps and continually stir for 2-3 mins.
- Serve with boiled rice or noodles.
