Ingredients:

• 400 gms – premium shrimps
• 1 whole green pepper (capsicum)
• 1 whole red pepper (capsicum)
• 1 Onion
• 1 bunch Spring onions
• 50 gms – Mushrooms
• 100 gms – beansprouts
• 1.5 Cucumber
• 2 Cloves Garlic
• 60 ml – Olive oil
• 30 ml – soya sauce

Method:

  1. Defrost the shrimps and marinate in a little lemon juice and salt for 15 mins.
  2. Chop the onions and dice the spring onions, mushrooms and garlic.
  3. Cut the green and red peppers and cucumber into strips.
  4. Heat the oil in a wok or deep frying pan, add onions and garlic and fry for 1 minute.
  5. Add the cucumber, mushrooms, green and red peppers, beansprouts and stir for 1 minute.
  6. Add the soya sauce and spring onions.
  7. Finally add the shrimps and continually stir for 2-3 mins.
  8. Serve with boiled rice or noodles.
