Ingredients:
• 1 medium Garlic clove, minced
• 2 tomatoes, peeled, seeded and chopped
• 1/2 cup chopped red Onion
• 1 cup cucumber, peeled, seeded and chopped
• 1/4 tsp freshly ground black pepper
• 1 cup Tomato puree
• 1/2 tsp oil
• 1 lime, juiced
• Salt and pepper to taste
• Sugar
• Herbs
Method:
- Peel and crush garlic to a smooth paste with a little salt.
- Cover tomatoes with boiling water, leave for 30 seconds, then drain, skin and roughly chopped.
- Peel and rough chop onion and cucumber.
- Remove stalk, seeds and core from pepper, cut into pieces.
- Discard crusts and cut bread into pieces.
- Place all the prepared ingredients in a bowl with half the tomato juice, tomato puree and oil.
- Leave it aside for 10 mins, then liquidize in an electric blender.
- Stir in remaining tomato juice, vinegar, lemon juice, sugar and herbs, and season to taste with salt and pepper.
- Serve well chilled with accompaniments.
