Ingredients:
• 16 oz (454 g) – smelt fish, cleaned
• 1 tbsp – chopped Garlic
• 1/2 – chopped Ginger
• 2 – slit Green chillies
• 1 tbsp – broken Mustard Seeds (rai kuria)
• 3 tsp – Red Chilli powder| | 1 tsp – Fenugreek powder
• 1 tsp – Turmeric powder
• 1 tsp – salt
• 2 strings – Curry leaves
• 1 cup – Vinegar
• 2 tbsp – oil
Method:
- Marinate fish with salt, turmeric and 2 tsp chilli powder for an hour.
- Grease the grill pan and spread the fish (1 layer).
- Grill/broil for 15 minutes one side.
- Then turn and apply little oil and broil for 10 minutes.
- Turn off the oven and let fish cool in the oven.
- Meanwhile, on the stove top, in a pan, warm oil, put curry leaves and fry for couple of minutes.
- Then add ginger-garlic, saute for 2 minutes.
- Mix in green chilli and then mustard powder fry till light brown.
- Now add fenugreek powder.
- Put the fish and 1 tsp red chilli powder and mix well.
- Add vinegar, stir and off the stove.
- When it’s cool, bottle it and refrigerate.
