
Ingredients:
• 1 cup – thick Cream
• 350 to 400 g – Pasta of your choice (boiled and drained)
• 1/2 cup – Butter
• 1/2 cup – toasted walnuts, coarsely ground
• 250 g – soft cheese, cut into pieces
• salt and freshly ground pepper to taste
• chopped Parsley or Coriander leaves
Method:
- Pour the cream into a pan and bring to a boil.
- Boil on low heat for several mins. until the cream thickens and reduces to half the quantity.
- Add butter, letting it melt slowly into the cream, keep stirring. Keep warm over low heat.
- Add the cheese to the cream, stir until the cheese is partially melted.
- Season with salt and pepper to taste, toss in the walnuts just before mixing in the sauce into the pasta.
- Garnish with parsley or coriander leaves.
