Ingredients:
• 8 – taco size flour tortilla shells
• 1 cup – taco sauce
• 1/4 cup – hot chilli sauce
• 1/2 – capsicum, chopped
• 1/2 cup – tofu, chopped
• 1 – onion, chopped
• 1 – tomato, chopped
• 2 – chillies, chopped
• 1 tsp – Oregano
• 1/2 tsp – Basil
• 1/2 tsp – Red Chilli flakes
• 1/2 tsp – peppercorn powder
• To taste – salt
• 1/4 cup – Cilantro leaves, chopped
• 1 tsp – Lemon juice
• 1/4 cup – low fat cheese
Method:
- Place chopped tofu, tomato, onion, capsicum and green chillies in a bowl.
- Add 1/2 cup taco sauce, chilli sauce, salt and pepper to it and mix.
- Now stir in chilli flakes, oregano and basil.
- Mix lemon juice and chopped cilantro leaves.
- Warm the taco shells in an oven (preheated to 200 degrees) for 5 minutes.
- Apply 2 tsp of taco sauce in the shell.
- Fill the stuffing in half of the shell, add cheese over it.
- Roast in oven or over a non-stick pan for 5 minutes or serve as it is.
- Serve hot with Mexican salsa.
